I had the nerve to call this Banana Ice Cream, much to the distress of my 5-year old son. He quickly corrected me! It’s Banana Swirl! He apparently got this idea off a children’s TV show, along with the instructions on how to make it. I had seen it on Pinterest and was curious about it, too, so I decided to try it out with the kids before Clark’s incessant requests drove me mad.
The instructions are very simple, but that does not mean the process is so simple! Oh – and I had Clark watching and correcting me at each step, so I had to be sure to do it right! He remembered the instructions right down to every detail and insisted on full compliance! We cut up about 6 bananas and put them in the freezer overnight. That was really too long, because when they came out, they were too hard and had to melt a little to blend properly.
We put the banana pieces into the blender and tried unsuccessfully to blend it into the promised creamy goodness. It didn’t happen. So, word to the wise – the blender is NOT the place to make Banana Swirl! Once I transferred it all to a food processor (and created twice the dishes), it worked much better.
The bananas do actually blend into a creamy, ice cream-type texture. Clark and Luci were insisting on cones, so I mixed the banana with chocolate chips and scooped it into a cone. They absolutely loved it, and I absolutely love that it is a healthy treat for hot summer days!
